Wash spinach. Place spinach in ziploc bag and poke several holes on top of bag. Microwave for 2 to 3 minutes.<br />

Plate spinach onto two plates. Add slice of cheese and 2 to 3 tablespoons of salsa to each plate. Microwave until cheese melts before serving.<br />

This recipe is designed to be easy, low cost and tasty. It can be prepared on the stove top as well as in a crockpot. <br />

Easy Peasy Veggie Soup<br />
<br />
1 bag frozen mixed veggies<br />
1 can Progresso Garden Vegetable Soup (or other vegetable soup)<br />
2 1/2 cups water<br />
1 large fresh tomato (or any other fresh veggies on hand)<br />
Seasoning (I use red curry but up to you)<br />
<br />
Place ingredients into crockpot. Cook either on high for 3 hours or low for 6 hours. <br />
<br />
I usually cook this on high so my aide can plate some and put in the refrigerator for me before the end of his/her shift. There's plenty to freeze as well. <br />
<br />
Variations<br />
<br />
Sometimes I leave the seasoning out and add a different seasoning to each bowl for variety sake.<br />
<br />
I also sometimes add cooked meat on hand to make a stew. Some ideas are cooked chicken, ham, ground beef or ground turkey. Usually I cook the soup without the meat, then add meat if it's available during the week.<br />
<br />
Accessible eating tip: Crackers are difficult for me to hold. I add some oyster crackers to soup when it's served. Or you can ask your aide to crumble up some saltines into your soup. <br />

I also use my George Foreman grill to make turkey bacon with a fiber English muffin. I grill the muffin first, then remove and grill the turkey bacon in under eight to ten minutes. It's not only quick and easy, but tasty. And, as I mention below, the turkey bacon can be cooked without defrosting it.<br />
<br />
Another energy saving tip is to package your turkey bacon in the freezer in small bags of eight to ten slices. I do this with a lot of food since I live alone and that way my aides have easier access to it and there's less waste. Some items like turkey bacon can be cooked frozen on the George Foreman grill - it may take a little longer but it's very convenient to skip steps when there's so much for aides to do!<br />

Sometimes features on an appliance make the difference between independence and dependence. For example, the nonstick interior of the West Bend Slow Cooker is a huge plus around my house.<br />

It's modeled after a cheese squash casserole with a little balsamic zip to it.<br />

Ingredients<br />
<br />
1 medium squash<br />
two dozen cherry tomatoes ripe<br />
1/4 onion diced<br />
1 to 2 servings of pasta, whole grain or regular<br />
4 tbsp balsamic vinegar<br />
1 to 2 slices of low fat cheese (weight watchers slices are 50 calories each)<br />

Grill squash, tomatoes, onions and balsamic vinegar in skillet for 10 to 15 minutes. Meanwhile, prepare pasta and drain. Combine ingredients, adding cheese to melt on hot food.<br />
<br />
<br />
This dish reminded me of a mac and cheese comfort food with veggies. I used 1 slice of jalapeno and 1 slice of cheddar cheese, which gave it an interesting taste, especially with the balsamic vinegar grilled onto the veggies.<br />

Grill the squash until done.<br />

So we tried out a recipe for chicken and yellow rice in the new steamer the other day. It was very easy and came out delicious.<br />
<br />
Since our search for recipes wasn't too successful, we experimented. We cooked the skinless boneless chicken breasts in the bottom section - alone- for twenty minutes. Then we added Goya yellow rice in the second section, which we removed after ten minutes, leaving the chicken in for the rest of the twenty minute timer. We added ten more minutes to make sure the chicken was tender, for a total of fifty minutes cooking time for the chicken.<br />
<br />
I added some pepper and garlic to the dish after plating it and am eager to experiment with more spices the next time we cook this. Will also cook some veggies with it in the third section of the steamer!<br />
<br />
