Eggplant dish in crockpot

As the cold weather sets in, I found  a tasty eggplant recipe that's easy to make in a crock pot

1 medium size eggplant,  cut in slices
medium onion chopped
can sliced mushrooms
1 cup spaghetti sauce
1 can diced tomatoes

Place all ingredients in slow cooker on high for 2 to 3 hours or Low for 4-6 hours.

Garnish with cheese, condiments to your taste before serving.

This dish is great to eat by itself, but also tastes good with pasta or rice.  Enjoy!.

  1. I always worry with eggplant/aubergine that it will go bitter and slimey. This looks gorgeous - will defo be giving it a try
